Coconut-Blueberry Smoothie - Easy


Check out this delicious super food-laden drink!  You can whip up a batch in less time than it takes to schlep to the local juice bar.  Healthier for your bod ...  and easier on your wallet too!
The hardest part of this recipe is to remember to freeze the berries the night before.  The second hardest is to remember to remove the container from the freezer when you wake up.  Then take your shower.  By the time you dry off and shuffle into the kitchen, the berries will be the perfect semi-thawed consistency to enjoy.


But if you forget to freeze 'em,  then just jump a half a cup of ice into the blender along with the other ingredients.  It won't be a thick, but still quite tasty.

Despite its name and cousin, hemp seeds won't get you high.  But is is high in protein and zinc.  It's also high in  vitamin E.   Far out, dude!


Coconut-Blueberry Smoothie
Based on Bonappetit October 2013
Yield:  2 Servings

1 1/2 cups frozen & partially thawed blueberries
1 cup unsweetened coconut milk
2 Tbl. sweetened flaked coconut, plus more for garnish
2 Tbl. hemp seeds, plus more for garnish
2 tsp. fresh lime juice


Place all ingredients in blender.  process 30-60 seocnds or until lsmooth.


Divide between 2 glasses and serve, garnished with additional flaked coconut and/or hemp seeds.
